Good, three real cooking nights is a solid basis - I'd build around that rather than seven.
Since you've already got rice and beans, I'd use one of the three nights to make a big pot of a beans-and-rice-based dish sized to stretch into a second night as leftovers - that covers two of your three nights from one cooking session.
For the grocery list, I'd only add fresh vegetables and protein sized for those two cooking sessions, not a full week of fresh ingredients, since the pantry staples are already covering part of the week.
